Method
 

Preparation
  1. Set up a frying station with a heavy-bottomed pot or deep fryer. Fill with vegetable oil to a depth of about 2 inches and heat to 350°F (175°C). Use a cooking thermometer for accuracy.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  3. In a separate medium bowl, thoroughly mash the ripe bananas with a fork until smooth. Add the eggs, milk, melted butter, and vanilla extract and whisk until the mixture is uniform.
  4. Pour the wet banana mixture into the bowl with the dry ingredients and gently fold everything together until just combined. Avoid overmixing.
Cooking
  1. Once your oil has reached 350°F, carefully drop dollops of batter into the hot oil, working in small batches of 4-5 beignets at a time.
  2. Fry for 2-3 minutes, turning occasionally, until golden brown on all sides.
  3. Remove the beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  4. While still warm, transfer them to a bowl with powdered sugar and toss gently to coat.
