Preparation
- Set up a frying station with a heavy-bottomed pot or deep fryer. Fill with vegetable oil to a depth of about 2 inches and heat to 350°F (175°C). Use a cooking thermometer for accuracy.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
- In a separate medium bowl, thoroughly mash the ripe bananas with a fork until smooth. Add the eggs, milk, melted butter, and vanilla extract and whisk until the mixture is uniform.
- Pour the wet banana mixture into the bowl with the dry ingredients and gently fold everything together until just combined. Avoid overmixing.
Cooking
- Once your oil has reached 350°F, carefully drop dollops of batter into the hot oil, working in small batches of 4-5 beignets at a time.
- Fry for 2-3 minutes, turning occasionally, until golden brown on all sides.
- Remove the beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- While still warm, transfer them to a bowl with powdered sugar and toss gently to coat.
