Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup strong brewed coffee, cooled
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
Frosting Ingredients
  • 1 cup butter, softened
  • 3 ½ cups powdered sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the eggs, coffee, buttermilk, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly between the prepared pans.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
Frosting
  1. For the frosting, beat the softened butter until fluffy.
  2. Sift together the powdered sugar and cocoa powder.
  3. Gradually add the dry mix to the butter, alternating with the heavy cream.
  4. Add the vanilla and salt, then beat until light and fluffy.
Assembly
  1. Frost the layers between the cakes and on the top and sides.

Notes

Use room temperature eggs and buttermilk for a smoother batter. Make sure to measure the flour correctly; spoon it into the measuring cup and level it off to avoid a dense cake. Let the cake layers cool completely before frosting to prevent melting and mess. For even baking, rotate the cake pans halfway through baking time.
