  • 3 pieces ripe bananas Approximately 1 1/2 cups mashed
  • 2.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 pieces large eggs
  • 1 tsp vanilla extract
  • 1 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9x13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, mash the bananas until smooth. Set aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas.
  6. Gradually add the dry ingredients to the banana mixture, alternating with the milk. Mix until just combined.
  7. Pour the batter into the prepared pans.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
