- Have all ingredients measured and ready before you begin whisking.
Caramelizing Bananas
- In a non-stick skillet, melt the butter over medium heat.
- Add the brown sugar and stir until dissolved.
- Add the banana slices in a single layer and cook for 2-3 minutes per side until they develop a golden caramel color.
Making the Zabaglione
- In your heatproof bowl over the simmering water, whisk together the egg yolks and granulated sugar until the mixture becomes pale and thick, about 2 minutes.
- Gradually add the Marsala wine while continuously whisking.
- Add the vanilla extract, cinnamon, and pinch of salt, continuing to whisk constantly.
Cooking the Zabaglione
- Continue whisking the mixture over the simmering water for 8-10 minutes until it has tripled in volume and holds soft peaks.
Assembly
- Divide the caramelized bananas among 4 serving dishes.
- Spoon the zabaglione generously over the bananas and serve immediately.
