Ingredients

Banana and Caramel Mixture
  • 4 pieces ripe but firm bananas, sliced diagonally into 1/2-inch pieces
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
Zabaglione Base
  • 6 large egg yolks, preferably at room temperature
  • ½ cup granulated sugar
  • cup sweet Marsala wine (substitute with port or sherry if unavailable)
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon ground cinnamon
  • 1 pinch salt
Garnishes and Serving
  • Fresh mint leaves for garnish (optional)
  • Crushed amaretti cookies or biscotti for serving (optional)

Method

Preparation
  1. Set up a double boiler by placing a heatproof bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water.
  2. Have all ingredients measured and ready before you begin whisking.
Caramelizing Bananas
  1. In a non-stick skillet, melt the butter over medium heat.
  2. Add the brown sugar and stir until dissolved.
  3. Add the banana slices in a single layer and cook for 2-3 minutes per side until they develop a golden caramel color.
Making the Zabaglione
  1. In your heatproof bowl over the simmering water, whisk together the egg yolks and granulated sugar until the mixture becomes pale and thick, about 2 minutes.
  2. Gradually add the Marsala wine while continuously whisking.
  3. Add the vanilla extract, cinnamon, and pinch of salt, continuing to whisk constantly.
Cooking the Zabaglione
  1. Continue whisking the mixture over the simmering water for 8-10 minutes until it has tripled in volume and holds soft peaks.
Assembly
  1. Divide the caramelized bananas among 4 serving dishes.
  2. Spoon the zabaglione generously over the bananas and serve immediately.

Notes

For a non-alcoholic version, substitute the Marsala wine with apple juice mixed with balsamic vinegar. For healthier alternatives, replace half the egg yolks with egg whites, use coconut oil instead of butter, or add chia seeds for extra fiber.
