Delightful Christmas Cookies that bring joy and warmth to the holiday season, perfect for sharing or leaving out for Santa.

Ingredients
  

Dry Ingredients
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Use room temperature butter for easier mixing.
  • 1 ½ cups white sugar
  • 1 cup packed brown sugar
  • 2 pieces eggs Can substitute with 1/4 cup applesauce or a vegan egg substitute per egg.
  • 2 teaspoons vanilla extract
Mix-ins
  • 2 cups chocolate chips
  • 1 cup chopped nuts (optional) Can use different types of nuts or mix-ins.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the flour, baking soda, and baking powder together.
  3. In a larger bowl, cream the softened butter, white sugar, and brown sugar until smooth.
  4. Beat the eggs in one at a time and then stir in the vanilla extract.
  5. Gradually add the dry ingredients into the wet mixture and blend well.
  6. Finally, stir in the chocolate chips and nuts if you’re using them.
  7. Drop spoonfuls of the dough onto ungreased baking pans.
Baking
  1. Bake in the preheated oven for about 9 to 11 minutes, or until the edges are lightly browned.

Notes

Serve Christmas Cookies warm or allow them to cool on a festive plate. Store in an airtight container at room temperature for about a week, or freeze them wrapped well for longer storage. If you prefer chewy cookies, take them out a little earlier. Customize with dried fruits or different types of chocolate.
