Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour 130g
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ¼ cup brown sugar 50g
Wet Ingredients
  • ¾ cup milk (or brandy) 180ml
  • 2 large eggs
Fruit
  • 3 cups mixed dried fruit 450g

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C). Grease and line an 8-inch round cake pan.
  2. In a mixing bowl, combine all-purpose flour, baking powder, and salt.
  3. In a separate bowl, whisk together brown sugar, milk (or brandy), and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the mixed dried fruit until evenly distributed.
  6. Pour the batter into the prepared cake pan, smoothing the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
